What's the difference between pressure stabilised and thermostatic models and which should you pick?

Thermostatic models mix hot and cold to your chosen temperature and actively adjust if supply temperature or pressure changes, so they reduce the chance of scalding. Pressure stabilised units keep both temperature and pressure steady and are particularly good if other appliances (washing machine, taps) cause pressure dips or spikes. If you want precise temperature control and safety, the thermostatic Advance models are a good choice; if you have variable household water use and want fewer interruptions, look at the pressure stabilised options.

Do any of these electric showers need a separate hot water supply?

Yes — the Manual type listed requires independent hot and cold feeds, with you controlling temperature and flow yourself. Most of the other electric models heat water from the cold mains so only need a cold feed and built-in controls such as pressure stabilisation or thermostatic regulation. If you already have an existing hot water source and prefer mixing from that, choose a Manual unit; otherwise a standard electric model will be appropriate.
